Certified Artisanal Mezcals prohibit the use of autoclaves, diffusers and column stills; the process of haversting, cooking, milling, fermentation and distillation must meet specific traditional requirements that make this product one of the purest distillates in the entire world due to such strict rules supervised by the Consejo Regulador del Mezcal (CRM) which is the organization in charge of regulating the industry.
Artisanal mezcal is free of additives, cooked in a traditional earthen or stone-lined underground pit, MACERATEDS using a mule-drawn stone wheel, openly fermented naturally with the only addition of water, and double distilled in cooper alembic stills.
